. Beef Bourguinon, slow cooked beef short rib with winter vegetables (onions, carrots, peas, mushrooms, garlic) in a rich beef and tomato sauce, with roasted potatoes. (Like beef stew, but THICC) .

. Chicken chile verde enchilada casserole layered with grilled corn tortillas, Spanish rice, black beans, charred corn, green tomatillo salsa, and CMM house made dairy-free nacho cheese sauce .
